The refractory ceramic and domed lid creates the right amount of humidity during baking, to get a dry, crisp crust.  The ridges on the bottom of the dish prevent the dough from sticking.  Manufactured from Burgundy clay, which distributes cooking heat, to evenly cook every loaf.
